Cranberry Cheese Bread
Overview
The Internet celebrity's cheese bread became very popular two years ago, but I have never made it. I saw some comments saying that it would taste a bit greasy, so I added some sweet and sour dried cranberries to the dough. The prepared bread is coated with a layer of cheese filling and then coated with milk powder. It tastes very fragrant with cheese and milk powder. The bread making method can be the direct method or the medium method. Choose whichever you like, whichever is commonly used. I think the key point is the cheese filling. The cheese filling will feel a little thin after it is made, so you need to put it in the refrigerator before using it. At this time, it will be much thicker and easier to spread on the bread. The following quantities can be used to make one 6-inch and one 4-inch round mold.

Add water, egg liquid, sugar, salt, and milk powder to the bread bucket.

Add flour and top with yeast. Place the bread bucket into the Dongling 1352AE-3C bread machine.

Select the dough kneading program for 10 minutes, let it sit for 5 minutes, add softened butter cut into small pieces, and then select the dough kneading program for 15 minutes.

After the dough is mixed, place a wet towel on top of the bread bucket and then close the lid of the bread bucket. Ferment at room temperature for about 50 minutes until the dough doubles in size. (You don’t need to start the bread machine’s fermentation function when the room temperature is high)

Take out the fermented dough, press it gently to deflate the dough, divide it into 310g and 170g dough, roll it into a round shape, flatten it again, and put it into a 6-inch and 4-inch round mold respectively. (The inner wall of the mold needs to be greased with butter to prevent sticking. If your mold is non-stick, this step can be ignored)

Put the bread dough into the Dongling K30A oven, select the fermentation setting of 35 degrees, and the fermentation time is about 40-50 minutes. (A bowl of hot water is built into the oven to maintain a certain humidity in the oven.)

Make the cheese filling while waiting for fermentation. Put the cheese cut into small pieces in a glass bowl, soften it with hot water, and add sugar.

Use an electric whisk to beat until smooth, then add milk and beat evenly.

Finally add milk powder and beat evenly. After sealing the glass bowl, place it in the refrigerator.

After the bread dough has fermented, brush the surface with egg wash.

Put it into the lower shelf of the oven that has been preheated to 170 degrees and bake for about 35 minutes. If the color is obvious, you can cover it with tin foil to prevent the color from being too dark. (The baking temperature depends on the temperament of your oven)

After the bread is done, take it out and let it cool, cut it into four pieces, cut twice in the middle of each piece, and then spread the cheese filling.
