Soak the ribs for more than 2 hours in advance to remove blood and drain until the water is clear.

Soak the dried red dates for half an hour in advance and save the water used to soak the dates.

Pour a little oil into the pot, add the drained pork ribs and stir-fry until the surface is slightly brown.

Pour in the white wine and rice wine and stir-fry until the wine steam evaporates.

Add tomato paste and stir-fry until coloured.

Pour in the water used to soak the dates. If it is not enough, pour in an appropriate amount of water until the water covers the ribs. Add rock sugar and soy sauce. Bring to a boil over high heat and simmer over medium to low heat for about half an hour.

When 1/2 of the water remains, add the soaked dates and appropriate amount of salt and continue to simmer for about 10 minutes.

Turn to high heat to reduce the juice and stir-fry quickly until the soup is almost dry.

Sprinkle appropriate amount of cooked white sesame seeds and stir well.
