I bought top-flowered cucumbers online, especially mini! It tastes great when fried with it! Crispy and tender! The rest was pickled into pickles!

After selecting, rinse away the dust with water

Marinate for about 1 hour to remove the moisture inside

After pickling, pour away the water, take out the cucumbers, spread them flat in a basin, and put them in a cool place to dry for a day

To cook the pickle, pour 100g vinegar, 100g rock sugar, 500g soy sauce (I also added a little water), 2 star anise, 1 small handful of Sichuan peppercorns, appropriate amount of dried chili pepper into the pot, bring to a boil over low heat until the rock sugar melts, turn off the heat and let cool
