Braised pork trotters
Overview
Stewed pig trotters with raw ground is a medicinal meal that clears away heat and cools blood, nourishes yin and promotes body fluid, nourishes yin and kidneys, and strengthens muscles and bones.

Wash the chopped pig trotters and set aside

Wash the raw rehmannia and cut into thick slices, soak in appropriate amount of water for ten minutes and set aside

Put the pig's trotters into a pot and blanch them in water to remove the fishy smell and blood stains

Then pour it out and rinse it with cold water

Ginger slices

Heat oil in a pan (just a little oil is enough) and sauté the ginger slices

Pour in the pork trotters and stir-fry over high heat until the skin is slightly brown

Add appropriate amount of salt, cooking wine, light soy sauce and sugar and stir-fry evenly, cover the pot and simmer for one minute

Pour in the water soaked in the honeysuckle vine (Note: The honeysuckle vine is also called honeysuckle vine. It has the effects of clearing away heat and detoxifying, dispersing wind and dredging meridians. It tastes slightly bitter. If you don’t like it, you can omit it and just add an appropriate amount of boiling water.) Forgot to take a step of cooking the honeysuckle vine. Wash the honeysuckle vine and boil it in a casserole with an appropriate amount of water to remove the flavor.

Then pour in the raw ground (plus the soup)

Bring to a boil and skim off the floating residue

Turn the pressure cooker to cover, turn to medium-low heat and simmer for 10-12 minutes, turn off the heat

Finally, after the steam in the pressure cooker has completely subsided, open the lid and add an appropriate amount of chicken essence to season.

Put onion knots and top with pig's trotter soup

The pig's trotters cooked in this way are not greasy at all, and one person can eat several pieces
