Spinach noodles
Overview
Today the weather is fine and the sun is shining brightly. However, the wind picked up in the afternoon, and the leaves on the trees could no longer resist it. They fell to the ground with a roar, and soon the earth was covered with a quilt. Winter is coming, but the community is not heated yet! Keep fighting the cold! Originally I didn't plan to have dinner, and followed the ancient saying of not eating after lunch, but some people complained that they felt uncomfortable without eating and couldn't sleep at night! Well, for the sake of family harmony, I will cook! Look at the spinach, a potato, and a tomato on the kitchen shelf. Then use the existing ingredients to make braised noodles. Even though you are cooking dinner, try to eat a light and easy-to-digest meal with as little oil as possible! So today’s Braised Noodles are vegan and non-vegetarian! Wash the spinach, dice it, and puree it in a food processor. Divide the flour into two portions, each portion is 100g, mix with spinach juice and water respectively, and let the dough rest for 20 minutes.

Soak daylily and fungus in heated water

Cut the soaked fungus and day lily into small sections, dice potatoes and tomatoes, cut cabbage into small sections, and mince green onion and ginger. The soybeans are soaked at noon and are not too full (it needs to be soaked for at least 7 hours).

After heating the pan, pour peanut oil, add onion and ginger and stir-fry until fragrant. Add potatoes and soybeans and stir-fry first, then add fungus and day lily and stir-fry for a few times. Finally, add cabbage and diced tomatoes. Add appropriate amount of salt and boiling water. Turn off the heat when the soybeans are cooked. I forgot to take a picture of the prepared noodles. When I remembered to take a picture, there was only a little bit left

Add appropriate amount of water to the pot and bring to boil. Now my baby is about to come on stage! A small dough-making machine is also called a dough pressing machine. Take a small piece of white dough that has risen and put it into the bottom of the machine, put another piece of spinach noodles on top of the white dough, then put a small piece of white flour on the spinach surface, and put the spinach dough on top (the pressed noodles are white ~ green ~ white ~ green) and tighten the lid. When pressing the noodles, press the noodles directly into the pot, one dose per person (adult amount). I can't take pictures of this process alone.
