Remove the scales, gills, belly and internal organs of the yellow croaker, marinate with cooking wine for a while, heat the oil over medium heat and fry the fish on both sides;

Bring the fish to the edge of the pot, stir-fry the peppercorns, ginger, garlic, sugar and bean paste over low heat until fragrant;

Add water to cover the waist of the fish, add pepper and bring to a boil over high heat;

Cover and cook over medium heat (turn over half way through), cover over high heat, pour vinegar to reduce the juice and remove from the pot, sprinkle with red pepper and chives.
