Spicy Braised Pork Knuckles

The weather is getting colder and I like to eat meat more and more. I eat more meat recently than in summer. I always feel hungry after a while, and I have to look for snacks at night. . . I hope I won’t gain a few more kilograms after this winter. . I like to eat braised pork with slightly spicy flavor. It is not only beautiful in color but also goes well with rice. As for the pork trotters, you can use pork belly instead. The last few times I had them, I had ginger and scallion pork trotters. Today I have to change the texture and make braised pork. The texture is the same as ordinary Taiwanese braised pork, but more dried chili peppers are added to enhance the flavor. Adding flower mushrooms and fried tofu is the cooking method in my hometown. You can do it without adding it, but it will feel like it is just meat without other ingredients. The mushrooms and fried tofu are very delicious and have a strong aroma when you take a bite.

Blanch the pig's feet, soak the mushrooms until soft, wash the fried tofu and set aside.

Add a little oil to the pot and sauté the garlic, dried chili peppers, star anise and cinnamon until fragrant.

Add the pig's feet and stir-fry.

Fry the pig's feet until slightly golden brown.

Place the fried pork knuckles into the slow cooker.

Add enough water to cover the pig's feet; continue to add the mushrooms.

Add braised soy sauce and light soy sauce and mix well.

Set the slow cooker to high heat, add the hard-boiled eggs and continue simmering for 1 hour.

After 1 hour, add the fried tofu and continue simmering for another 30 minutes.
