Steamed hairy crab
Overview
When traveling to Sanshan Island, hairy crabs are very cheap there, only 15 yuan each. We buy our own hairy crabs for every meal and process them in the restaurant. They are steamed just right every time, oily and tender. I just had time today, so I went to the kitchen and learned how to make steamed hairy crabs from the lady boss. It’s really not as complicated as what we made. People just put it in the oven and steam it. It turns out it’s so simple. Did you do it right?

The hairy crabs I just bought, 5 for 5 people, were left in the pool for less than 10 minutes. They are very fresh. Hairy crabs are cold in nature, so don’t eat too much at one time.

Rinse with cold water. I use a toothbrush to brush from head to toe at home. The lady boss said that the hairy crabs in Taihu Lake are very clean, so just rinse them with water and they will be fine.

Add an appropriate amount of water to the pot and put the steaming curtain on it. Note that this is one of the key steps. Place the hairy crabs in the pot under cold water and insert them into the steaming curtain with their belly facing up. This will prevent the crab roe inside the crab from flowing out.

Cover the pot, and the second key step is to put 4 or 2 large hairy crabs into the pot under cold water and steam them for 15 minutes. This time is what they usually accumulate, and they will be steamed just right every time.

When the time is up, turn off the heat.

To make a sauce, peel, wash and chop the green onions, peel, wash and chop the ginger, add an appropriate amount of sugar, vinegar, and seafood soy sauce to taste. You can also steam it with the hairy crabs, or fry it with some oil and pour it on. In short, you can adjust this dipping sauce according to your favorite taste.
