Blanch the pork ribs with scallions and ginger slices, then wash them well, add salt, light soy sauce and a little bit of sugar. The amount of salt here is very small, just add the base flavor, because we will use the mushroom sauce later, the dark soy sauce will give it a little color, and mix it evenly.

Use a pan to fry the ribs until fragrant. In fact, I later thought that this step can be omitted and it would be great to bake them directly in the oven. So I will skip this step when I do it again.

Cut old pumpkin into cubes.
