Tianjin people all have a lingering love affair with noodles. They like to eat fried noodles with soybean paste in normal times and sesame paste noodles in summer. When there is a happy event, they will often say generously: I’ll treat everyone to noodles! Wedding ceremonies in Tianjin (urban area) are held in the afternoon, usually from 3 to 6 o'clock. When a daughter of the family gets married, the family members start busy in the morning, and at noon they invite relatives and friends who come to help out for a meal of noodles, which is called happy noodles. When I was a kid, my father would cook three kinds of fresh noodles and braised noodles every year on the second day of the Lunar New Year. The delicious and delicious feeling is still unforgettable. There seems to be no rules for the ingredients used in making brine, and every family has its own unique recipe.
