Fish head with double pepper
Overview
Fish head with chopped pepper is a very common home-cooked dish, but with a little bit of care, you can turn an ordinary home-cooked dish into a five-star banquet dish; chopped pepper is paired with millet pepper, two different flavors of chili, covering the white and tender fish head meat, with a steaming and fragrant aroma. The steaming method allows the fresh aroma of the fish head to be retained in the meat as much as possible, and the flavor of the chopped pepper and millet pepper penetrates into the fish just right, making people salivate! Learn and practice: 1. Garlic is a spicy material that is similar to the taste of fish. It can remove fishy smell and increase flavor. You can also fry garlic in oil over low heat until fragrant, which is called golden garlic. The spiciness is reduced and the fragrance is richer. Together with fish heads and chopped peppers, the flavor is more unique. I like spicy food, so I used white garlic (also called silver garlic). 2. Remove the gills from the fish head and clean it, especially the black membrane in the belly of the fish body. It must be scraped clean, which is the key to removing the fishy smell. 3. The specific time for steaming the fish head depends on the size of the fish head. 4. Do not put the chopped peppers on directly before steaming. Wait until the first fishy juice from the steamed fish head is poured out before laying it on the bed. This way, the steamed fish head will be fragrant but not fishy

Wash the fish head and cut it open, evenly apply cooking wine, white pepper and a small amount of salt (because minced pepper contains salt, so there should be less salt), and marinate for about 15 minutes.

Chop millet pepper, red pepper, shallot, garlic clove, yellow pepper, and red pepper and set aside.

Slice ginger and green onions into sections, spread the ginger slices and green onions evenly on the bottom of the plate

Place the fish on the green onion and ginger in the plate. After the water in the steamer boils, put the steamed fish plate into the lid and steam for 3 minutes. Open the lid and pour out the fishy juice seeping out of the steaming plate

Spread the chopped red pepper, millet pepper and red and yellow pepper on half of the fish head, sprinkle a small amount of sugar and steamed fish soy sauce, cover and continue steaming for 9 minutes, then turn off the heat and simmer for 3 minutes;
