Overview
Mapo Tofu is a delicious snack. Although the author is from Guangzhou, I also like spicy food, so I copied Mapo Tofu. It tastes very satisfying and satisfying.

Boil a pot of water, add 2 teaspoons of salt, put in the tofu cut into pieces, and simmer for 20 minutes. Gently drain the water and set aside. While the tofu is cooking, free up your hands to handle the chives. Chop the white scallions into fine pieces and dice the green scallions;

Place the pot on the stove, turn on medium heat, pour in the minced meat, mash it up with a spatula, and stir until the water comes out. If there is too much water, decant it. If there is not much water, set the fire to collect the water, and set it aside;

Heat the pot, add about 2 tablespoons of vegetable oil, pour in the Sichuan peppercorns, stir over medium heat until fragrant, and pick up the Sichuan peppercorns;

Turn on medium heat, add bean paste and dried chili peppers cut into sections, stir out red oil, pour in minced ginger, minced garlic and minced green onion, saute until fragrant;

Pour in the tofu and minced meat, add 1/2 tablespoon of sugar, 1/2 teaspoon of pepper, and mix evenly;

Blended with starch water, 2 teaspoons of cornstarch, 1/3 cup of water;

Pour the starch water evenly into the pot, turn on high heat, add garlic leaves, mix well, heat until the starch water bubbles, and put it on a plate;
