Roasted Eggplant with Ham Sausage
Overview
Eggplant is delicious and tender. The meat of round eggplants is plump and has a delicate taste; the meat of long eggplants is fresh and tender, and the finished product is softer and glutinous. The two types of eggplant can also be cooked differently. Today’s roasted eggplant recipe uses long eggplants, and I cut the remaining ham sausage into strips and cook them together. The taste and color are great!

Clean two long eggplants
