"Santa Claus is having a meeting" Cream Cake
Overview
December 22 is my brother’s birthday. With Christmas and the newfound joy, I made this festive birthday cake for my brother. I couldn’t think of a very specific name, because it was decorated with fresh strawberries and looked like a cute Santa Claus, so I came up with the theme of Santa Claus having a meeting. What were they discussing in the meeting? Oh, they were discussing how to give out gifts! Okay then! Give this gift to your brother first!

Ingredients
Steps
-
The cake ingredients are ready (amount for one cake)
-
Put milk and corn oil into a basin, mix thoroughly, then separate the egg white and egg yolk, put the egg yolk directly into the milk and corn oil basin, and put the egg white into an oil-free and water-free basin
-
After the egg yolks are thoroughly mixed with milk and oil, add 20 grams of sugar and beat evenly
-
Sift the flour and salt into the egg yolk batter and beat evenly
-
Squeeze a few drops of lemon juice into the egg whites
-
Use an electric whisk to make rough foam, then add 20 grams of sugar and continue to beat at high speed
-
When it forms a fine and dense foam, add 20 grams of sugar and continue to beat at high speed
-
When the texture becomes obvious, add the remaining 20 grams of sugar
-
Lift the egg beater and the whisk is complete when there are small upright corners. At this point start preheating the oven to 140 degrees
-
Take one-third of the egg white batter and fold it into the egg yolk batter
-
After mixing evenly, add one third of the protein paste
-
Add the remaining egg white batter and mix into a fine and smooth cake batter
-
Pour the cake batter into an 8-inch removable bottom mold and shake it a few times to release big bubbles
-
Put it into the preheated oven, on the middle layer, first start at 140 degrees, upper and lower heat, bake for 30 minutes, then turn to 170 degrees, upper and lower heat, bake for 20 minutes
-
After taking it out of the oven, shake it lightly a few times to release excess heat from the cake body
-
Place upside down on a drying rack, let cool completely and then unmold
-
Two cakes are ready
-
Cut each cake in half crosswise, use only three slices, and eat the other slice directly or for other purposes
-
Clean the strawberries
-
Cut some into small dices for filling, and some for surface decoration
-
Prepare the sugar and whipping cream. The whipping cream must be refrigerated for at least 24 hours before use
-
Put 400 grams of whipping cream and 60 grams of sugar into a bowl
-
Beat until the volume is enlarged and slightly hard. 80% to 90% hair is best. The particularly hard ones will have too many air holes inside
-
Place the cake base on the paper tray, spread a layer of cream, and then evenly spread a layer of diced strawberries
-
Apply another layer of cream
-
The second layer is completed according to the above process
-
Place the third layer on
-
Apply butter on the surface. Don’t worry too much about whether it is smooth, because you will need to make some decorations later to make up for the shortcomings of the surface
-
Use a ruler to measure the height of the cake, use a small string to measure the circumference of the cake, then cut out corresponding strips of paper with oil paper, and then use a slightly wider piece of oil paper to pad the bottom
-
Break the dark chocolate into small pieces and put it into a piping bag. Don't cut the front. You can tie it tightly with a rubber band or tie at the back
-
In a pot of hot water, melt the dark chocolate
-
Cut a small opening in the front of the piping bag and extrude patterns on the oil paper at will,
-
Seize the time well, and when the chocolate is not completely solidified, wrap the paper around the cake body and press it gently with your hands
-
Remove the paper and the chocolate rim is completed
-
Add some whipping cream
-
Install a suitable flower nozzle and put in light cream
-
Decorate the bottom edge, flatten the bottom of the strawberry, then cut off the head, place it on the top surface of the cake, pipe some cream, then top the strawberry, and finally pipe cream on the blank space to decorate, then use the remaining chocolate to make Santa Claus’s eyes and flower core, sprinkle some powdered sugar on the surface, and treat it as snow
-
The cake is finished, the meeting is over, and Santa Claus is going to various places to deliver gifts
