Scrambled Eggs with Mushrooms, Chives and Onions
Overview
Occasionally, I saw a chef on YouTube explaining his experience in handling mushrooms. I learned a lot. You can extend the fried mushrooms to scrambled eggs or fried meat. As the saying goes, seeing is better than hearing. I think doing it is worse than thinking. You will know after doing it.

Beat the eggs, add 1/3 tsp salt, 1/3 tsp pepper, 1 tbsp vegetable oil, 1 tbsp brandy, beat the egg mixture evenly with a fork;

Cut the green onion into cubes, add the egg liquid, and stir evenly;

Slice the mushrooms, turn on medium heat, put some oil in the pot, pour in the mushroom slices, stir-fry until the mushrooms are broken, set aside;

Pour the mushrooms into the egg mixture and stir evenly;

Turn up the heat again, put the bottom oil in the pot, and pour in all the ingredients;

Fry the eggs until just cooked, turn off the heat, and mash them into pieces with a spatula or frying spoon before serving.
