Tomato and Lamb Scissor Noodles
Overview
There is a saying that it is difficult for a clever woman to cook without rice. Half a cup of rice in the rice vat was cooked yesterday, so today we are out of food! Just when I was about to close the pot, I spotted three packets of high, medium and low-gluten flour. Hehe... I have a plan! Scissor noodles. Handmade noodles have recently become the mainstream at home, and the whole family likes them. No need to stretch or roll, just use a pair of scissors to make it. It’s simple and convenient to eat and cook as you go, and you don’t even have to move the dough press. The finished scissor noodles are like small whitebait in different shapes, delicious and fun!

Ingredients
Steps
-
Flour, 1 tsp salt (about 5g), 120ML water, mix well with chopsticks
-
Knead it into a slightly hard dough, cover it with plastic wrap and let it rest for more than 20 minutes
-
While the noodles are waking up, prepare other ingredients: drain the mutton to remove the smell
-
Re-inject an appropriate amount of water, add ginger, bay leaves, cumin, pepper, star anise, cloves and other spices to the mutton and cook in a pressure cooker for 15 minutes to form a mutton soup base. Add some salt to taste
-
Also prepare tomatoes and eggs
-
Tomato dices
-
Beat eggs with salt
-
At this time, the noodles are almost awake. Prepare a dry plate and spread dry flour on it to prevent sticking
-
Knead the dough into a cone shape, hold the dough in one hand and scissors in the other, and slowly trim while turning
-
Until all the pruning is done (when the pruning is almost done, go to the flowers and prepare to boil a pot of boiling water)
-
When the water boils, you can add noodles.
-
Wait for the noodles to boil, pour a bowl of cold water over it, boil it again, and then boil another bowl of cold water. If this happens two or three times, the noodles will be cut and cooked. Remove them to a bowl and set aside
-
Reheat the pan with cold oil and boil, scramble the eggs
-
Fry the eggs, then add oil and sauté the minced garlic
-
Add tomatoes and stir-fry over medium heat until soup comes out
-
Add eggs, sugar, salt, sauce, and a little water, stir well, and you have a delicious tomato scrambled egg. Spoon directly into the noodle bowl
-
Finally, pour the mutton soup and sprinkle with coriander and green onion. At this point, the fragrant tomato mutton scissor noodles are done.
