Braised yellow croaker
Overview
The meat of yellow croaker is fresh and tender, rich in nutrients, and the most important thing is that it has relatively few spines, making it suitable for cooking for children.

Remove the internal organs of the croaker, wash it, place a knife on both sides of the fish body, and marinate it with salt for fifteen to twenty minutes. Cut the green onions into diagonal sections (I still use green onion leaves picked from the green onions I planted, but it is best to use white green onions), shred the carrots, and mince the garlic.

Heat oil in a pan, add croaker and fry until one side is set.

Turn over and continue frying.

Add soy sauce and pour it over the fish.

Add appropriate amount of water

Sprinkle some pepper

Add two dried red peppers and push gently with a spatula a few times to mix the seasoning evenly. Cover the pot and simmer over medium heat for about fifteen minutes.

When the soup in the pot is reduced to enough to make gravy, remove the fish and place it on a plate.

Add shredded carrots into the soup

In a bowl, use appropriate amount of water and starch to make gravy, pour the soup into it, and use a spatula to spread evenly.
