Two days ago, my husband wanted to eat fish head cakes, so he bought a big fat fish head. . . I made cakes for him. It was my first time to make such a dish. I consulted the recipe and added some of my own creativity. It tasted pretty good.

The fish heads I bought weighed more than three kilograms and were very large, so I used a lot of seasoning. I don’t need so much pork belly, I haven’t cut it yet. After cutting it, you can use more than a dozen slices. The one on the left is the leftover meat skin, which is also good for stewing. Four or five shiitake mushrooms, not too many. There are also a dozen Sichuan peppercorns, three star anise, a piece of cinnamon, and three dried chili peppers that I forgot to take.

Clean the pot and heat the oil. Add onion, ginger and garlic, then add pork belly and stir-fry until oil is released. Add star anise, cinnamon, chili, a little oil, fresh soy sauce, white pepper. Add the fish head and add water to cover it. Add three spoons of yellow sauce and three spoons of sweet noodle sauce to water, mix thoroughly and put them into the pot.

Finally, add tofu on top, cover and simmer over medium heat. Keep simmering. While simmering, you can prepare the pancakes. After the cake ingredients are ready in about 30 minutes, open the lid and turn to high heat to collect the juice. Fry the pancakes while the juice is collecting. This way the cake is also hot.

When the dough is soft, let it rest for about 20 minutes. Roll it out into a thin shape, apply oil on it, roll it up, and cut it into pieces. Flatten it vertically and roll it into a cake, about 5mm thick. Coat a non-stick pan with a little oil and fry pancakes over low heat.
