Pancake version of grilled eggplant
Overview

Change the knife to the eggplant as shown in the picture. It is best to bake it after cutting it.

Heat oil in a pan, place the pan with the cut side down, and bake over high and low heat.

Roast until the eggplant has some banana bites as shown in the picture. Turn it over so that the chopped side of the eggplant faces upward. Then turn off the heat and continue to roast it on the lower heat without covering the lid.

While the eggplant is roasting, put the minced garlic, millet pepper (or pickled pepper), fried sesame seeds, sugar, oyster sauce, and light soy sauce into a seasoning bowl, then heat the peanut oil, pour it over and mix well.

Pour the seasoning into the slits and surface of the eggplant, then cover the pot and grill over high and low heat until cooked through.

After the eggplant is cooked, open the lid and continue roasting to let the steam dry out, and then put it on a plate and take it out of the pan after it becomes fragrant.
