  3. Put more vegetable oil in the bottom of the pot, add rock sugar in the cold oil, turn on low heat and stir-fry the rock sugar.

  4. Fry the rock sugar until it melts and turns caramel color. When frying the rock sugar, you need to pay attention. If the rock sugar is over-fried, it will taste bitter. If the rock sugar is not fried for enough time, the rock sugar will clump after adding the meat.

  6. Stir-fry the ribs for 2-3 minutes, then add all the dry spices and stir-fry for 2 minutes to bring out the aroma of the spices. If you like it spicy, you can add a little dried red chili pepper, or you don’t need to add any chili pepper.
