Rich Fried Rice
Overview
Taking advantage of last night's meal and adding some ingredients still in the refrigerator, I made this rich fried rice. I couldn't let my stomach settle when I was at home alone on the weekend.

Mix the egg whites with a little salt.

Heat a pan over medium heat, add a little oil, add minced garlic, dried onions and minced ginger and stir-fry until fragrant.

Add shrimp, cabbage and scallops and stir-fry until half cooked, set aside.

Use the same pot, add a little oil, add overnight rice and stir-fry until loose. Add egg whites and stir-fry evenly until rice grains are coated with egg paste.

Add shrimp, choy sum and scallops and stir-fry evenly. Add salt, sugar and sesame oil, stir well, sprinkle with chopped green onion and serve.
