  1. Put the elbows into a pot of cold water, bring to a boil and blanch them, then add cooking wine.

  6. After blanching the elbows, take them out and put them in a pressure cooker. Pour over the freshly fried sauce, add half a pot of boiling water, and pressure for 30 minutes.
