Overview

Douhua is a common and delicious dish in rural Sichuan. The original form of Fushun Tofu was during the Republic of China. A businessman who came to Fushun to sell salt had no time to wait for fried tofu, so he asked the restaurant owner to sell him soft tofu that was not fully solidified. Of course, tender tofu cannot be fried, so the old man asked the cook to prepare chili water for the guest to dip it in with his rice. Inspired by this, the old man repeatedly studied the freshness of the tofu pudding, the recipe for dipping it in water, and the most suitable rice to serve with the tofu pudding. Later, Fushun Tofu Pudding became a classic signature dish in Sichuan cuisine.
