Glutinous rice egg roll
Overview
Recently, my mother-in-law said she wanted to eat sweet wine, so she bought some glutinous rice to make it. After making the sweet wine glutinous rice, there was still some left. I remembered the glutinous rice egg rolls I had eaten at home, so I tried to make it myself

Steps
-
Soak the glutinous rice one day in advance and cook or steam it. If you like it softer, boil it, but don’t add too much water, otherwise it will be too sticky. If you like it chewier, steam it
-
Soak the mushrooms in boiling water in advance, chop the carrots and onions,
-
Chopped shiitake mushrooms
-
Chop the pork into fine pieces, or use a food processor to mince it
-
Add salt, light soy sauce, dark soy sauce, cooking wine, oyster sauce, flour and pepper to the minced meat and mix well
-
Heat oil in a pan
-
Add the minced meat and stir-fry until it changes color
-
Add minced onions, minced mushrooms, and minced carrots in turn and stir-fry for about a minute. Add appropriate amount of salt to taste. It can be a little saltier than usual because rice is also mixed in
-
Pour an appropriate amount of the water in which the mushrooms were soaked into the glutinous rice, and break up the glutinous rice to enhance the flavor
-
Add the fried minced meat and mix well. During this period, you can also add salt or other seasonings according to your own taste
-
Add two tablespoons of flour and a small amount of water and stir evenly. The purpose of adding flour is to make the egg skin spread better and become stronger
-
Add 6 eggs and mix well
-
Brush oil on a flat-bottomed non-stick pan and heat it up. Pour in the egg batter and spread it quickly to cover the whole pan. Pour out the excess egg batter
-
Fry over low heat until the egg batter solidifies on the surface and then pour it out, about 10 seconds. Be sure not to burn it. Fry all the egg batter
-
Put plastic wrap on the sushi curtain, put an egg skin on it, spread the glutinous rice evenly, and roll it from bottom to top. If you don’t have a sushi curtain, you can also roll it by hand
-
Pinch it a little
-
Complete
-
Roll them all up, cut them into sections and put them on plates. I make more, which is enough for three meals. The rest are wrapped in plastic wrap and put in the refrigerator to be eaten as soon as possible

You can also top it with gravy and sprinkle with chopped green onion
