Overview
Spring rolls are a traditional and ancient dish that evolved from ancient spring dishes. Traditional spring rolls are made with pancakes as the skin and stuffed with celery, leeks, and spring bamboo shoots. They symbolize hard work, longevity, and prosperity, and are used to welcome the new year. Spring rolls welcome the spring, which means good things. It is a dish that my family must make during the Chinese New Year. Although there are many spring rolls on the market now and there are many varieties, Zerui’s mother still likes to make her own spring rolls. After all, the ones she buys are not as safe as those made at home. And making spring rolls by yourself makes the New Year atmosphere even more intense. The fried spring rolls made by Zerui’s mother today still retain the basic recipe, but slightly changed the fillings, using bean sprouts, shredded chicken, carrots and leeks, which symbolize good luck, good fortune, prosperity and longevity, and have beautiful meanings. They are very suitable for making dishes to welcome the New Year~~~

Main ingredients: spring roll wrappers, chicken, mung bean sprouts, leeks, carrots

Slice the chicken breast into large thin slices first, then cut into shreds

Put the shredded chicken into a bowl, add a little cooking wine, pepper, a little salt, water starch, mix well and marinate for a few minutes

When marinating the chicken, pick and wash the bean sprouts, shred the carrots, cut the leeks into sections, and cut some green onions and ginger.

Heat oil in a pan, add green onion and ginger and stir-fry until fragrant, add shredded chicken and mince it

Fry the shredded chicken until it changes color, add the shredded carrots and stir-fry evenly

Add mung bean sprouts and continue to stir-fry

Fry until the bean sprouts are just broken, add salt, oyster sauce and a little MSG.

Add chopped leeks.

Stir quickly and turn off the heat

Take a piece of spring roll wrapper and put appropriate amount of filling

Roll up one side first, then fold both sides toward the middle;

Finally, roll it to the other side to form an oblong packet, seal it with a little water starch; wrap everything in sequence.

Heat oil in a pan until it is 70% hot, turn to medium heat and add the wrapped spring rolls one by one;

Fry until the surface turns golden brown, remove and wash off excess oil on the surface with oil-absorbing paper.
