Add salt to the duck, soak in cooking wine for 15-20 minutes, clean and set aside.

Blanch in a pot under cold water and add white wine to remove the fishy smell.

Stir-fry green and red peppers, millet peppers and garlic until raw and set aside.

Heat the pot with cold oil, sauté the duck until fragrant, add ginger, star anise, and cinnamon, stir-fry again until fragrant, add white wine, stir-fry, add beer, soy sauce, salt, and rice wine and simmer for 30 minutes.

Before the juice is reduced, add the fried garlic, green and red pepper, and millet pepper

When the soup is almost dry, add chicken essence, then pour in cornstarch water to thicken it.
