Make sesame chili oil: Pour an appropriate amount of cooking oil and heat it up. Put the chili noodles and Sichuan peppercorns in a bowl. Pour the hot oil directly into the bowl and mix it quickly with a spoon. Use a small colander to filter the residue from the chili noodles and Sichuan peppercorns. Set aside the prepared chili oil.

Use a bone-chopping knife to cut the beef ribs you bought into 10-meter-long chunks. After cutting, wash the blood from the beef ribs with clean water.

Put the washed beef ribs into a pot and simmer over high heat for 30 minutes (it is best to use an electric pressure cooker for 30 minutes at high pressure) and add 1 green onion knot.

Prepare auxiliary ingredients: scallions, ginger slices, garlic, star anise, cinnamon, and bay leaves.

Remove the cooked steak with a slotted spoon and drain the water, leaving a small bowl of steak stew soup for later use.

Heat oil in a pan, add onion, ginger and garlic and stir-fry until fragrant.

Pour in the cooked steak, add salt, chicken powder, sugar, bean paste, cooking wine, light soy sauce, and dark soy sauce and stir-fry quickly until fragrant.

Pour in the steak broth, add spicy oil and cook for 15 minutes.

Pour in water starch to thicken the soup and serve. Sprinkle with chopped green onion.
