Homemade Mapo Tofu
Overview
Mapo tofu not only tastes delicious, but also comes in different colors. Green chopped green onions are scattered on the plate, just like green leaves. The tofu dipped in hot sauce turns into blooming red flowers, which are particularly eye-catching against the green leaves.

Onions, ginger, garlic, dried chili peppers, bean paste, minced meat (both pork and beef are acceptable), and tofu.

Add a spoonful of salt to the pot. After the water boils, add the tofu and blanch it for one minute. Remove and set aside.

When the oil is hot, add onion, ginger, garlic and dried chili and stir-fry until fragrant.

Add bean paste and stir-fry until red oil comes out.

Add minced meat and pour cooking wine.

After frying the minced meat, pour in appropriate amount of water, add dark soy sauce, light soy sauce, oyster sauce, and sugar.

Transfer to a casserole and bring to a boil over high heat.

Add previously blanched tofu.

Simmer for 5 minutes.

Pour in the water starch and reduce the juice over high heat.

Finally, sprinkle in the peppercorns and green onions.
