Sweet and Sour Pork Ribs

It is estimated that not many people can master the dish of Braised Pork Ribs. No matter which method is used, the attractive color and rich aroma of sweet, sour and crispy meat will separate the bones from the flesh in one bite, haha! Four words, so delicious! Haha!

  1. Soak the ribs in clean water to remove the blood and wash them thoroughly.

  2. Boil the ribs in a pot of cold water, remove the float, take out the ribs and drain the water. This step is to remove the blood and fishy smell again.

  3. Wash the materials and set aside.

  4. The sugar is ready for use.

  5. Put oil in a cold pan, add sugar over medium-low heat, and stir-fry the sugar color. This step must be done with constant stir-frying and patience.

  6. When the sugar melts and turns brown, add the ribs and stir-fry until the ribs are evenly coated in sugar and colored, then take them out.

  7. Leave oil in the pot, add ginger and garlic cloves, stir-fry to release the flavor, add the ribs and stir-fry a few times. Pour boiling water to cover the ribs.

  8. After the water boils, add cinnamon bark, bay leaves, 2 tablespoons of vinegar, 30 grams of rock sugar, a stick of green onion and red yeast rice water. Simmer over medium heat for 20 minutes.

  9. After about 20 minutes, remove the ginger, garlic cloves, scallions, bay leaves, and cinnamon from the pot. Continue to stew the ribs for 5 minutes, then add 2 tablespoons of vinegar and a small amount of salt again, stir-fry over high heat to reduce the juice. When the soup bubbles as shown in the picture, it means the soup has become thicker. Continue to stir-fry for 1 minute and then turn off the heat!

  10. Turn off the heat and get ready to serve!

  11. Use chopsticks to pick up pieces one by one on the plate, and finally pour some soup from the top. Wow! Let’s eat deliciously!
