Overview

This dish is Sister Xin’s innovative dish. Normally we use fried tofu, water tofu, gluten and other ingredients to make fried stuffed rice. Sister Xin’s innovation is that this dish uses original dried tofu. After deep-frying, the surface of the dried tofu reaches the texture of oily tofu, while the inside retains the dry aroma of tofu. Together with the sweetness of fish, it is very suitable as a snack or at the moment with drinks and dishes.

  1. Pork and fish will taste better when minced by hand with a knife than minced by a machine.

  2. Add minced scallions and ginger to the minced meat, mincing it as much as possible.

  3. Add all the marinade ingredients, stir evenly and tart until gelatin is formed. Set aside. This dish must utilize the viscosity of the isinglass to complete, so no water is added to the filling.

  4. Choose the original flavor of dried tofu for better taste. Don’t choose the ones with smoked aroma. Clean it, drain the water, apply fine salt powder and marinate for half an hour, then cut it into square pieces and set aside.

  5. Take a piece of dried tofu, take an appropriate amount of isinglass, and smooth it out with a knife.

  6. Then cover it with another piece of dried tofu and press it gently so that the two pieces of dried tofu stick together.

  8. Beat the eggs until the whites are no longer visible, no need to beat.

  10. After gluing the egg liquid, roll it inside the cornstarch and add dry flour.

  11. Repeat the above steps piece by piece, and then spread them out on the chopping board to allow the dry powder on the surface to fully absorb water. When enough water is absorbed, the next step will not fill the pan with dry powder.

  12. Turn on the oil pan and when the oil temperature is 70% hot, add the stuffed tofu and fry it.

  13. Fry until golden brown, dry the tofu into oily tofu shape, and serve it out of the pan. Garnish with some chopped green onions, and prepare some spicy, sweet and sour dipping sauces to serve together. Just dip it in whatever flavor you like.
