My wife said that she has been craving for fried noodles recently. She remembered that the fried noodles in the second cafeteria when she was in school made her unforgettable for a long time. Haha, I said yes, I haven’t eaten it for a long time, so I thought about making it to satisfy my appetite. Of course I couldn’t buy fresh rice noodles this time, so I had to make do with dried rice noodles. Because it’s rice noodles made in Thailand, the taste is different from store to store. Anyway, I can’t worry about that much, I want to eat more than anything else! ~

  2. Cut the various ingredients and stir-fry the noodles at a high temperature. If you think of preparing it at the last moment, it will be too late. At the same time, soak the powder in cold water until it becomes soft. It can bend naturally when you pick it up. Otherwise, the texture will be too soft after stir-frying.

  3. Slice the pork belly, optionally with the skin on, and marinate with light soy sauce, rice wine, and oyster sauce for 30 minutes.

  4. Take a piece of animal fat (I used the fat left over from the last time I made Wenchang chicken, which has the unique fragrance of Wenchang chicken), fry it slightly, then add water and boil it. After the water evaporates, pure fat is left.

  5. Take out the marinated pork belly, fry until fragrant, and season with a small amount of red pepper.

  7. Finally, fry the onions in a separate pot, stir-fry the flour, vegetables and other ingredients together, season with light soy sauce, sugar, salt (a little), rice wine, and turmeric, and serve with chopped green onions.
