A handful of white cloud beans, soaked eight hours in advance. Pluck the remaining hair from the pig's trotters, burn them on the fire, wash them, cut them in half and soak them in water for an hour to remove the fishy smell.

Put the pig's trotters into a pot with cold water, add green onions, ginger slices, and cooking wine and blanch them, take them out and wash the surface with hot water.

Add 800g of salt-free original chicken soup to the pot, just enough to cover the pig's trotters (if the chicken soup is not enough, add some water), add 3 green onions, 3 slices of ginger, 40 peppercorns, 10 white peppercorns or an appropriate amount of white pepper powder. Bring to a boil over high heat, then reduce to low heat and simmer for 25-30 minutes.

Remove the stewed pig's trotters, filter the soup into the wok, and bring to a boil over high heat.

Add an appropriate amount of salt (not too much salt, just make the soup taste palatable), pour it out, and sprinkle some chopped chives on the soup surface. You can also add some MSG and chicken essence if you like.

Wash the wok, add 35g of rapeseed oil and 20g of Pixian bean paste.

Turn on low heat and fry slowly until fragrant.

Chop two garlic cloves into mince, add 1.5 tablespoons of Donggu Yipin fresh soy sauce and 0.5 tablespoons of sesame oil. Pour the fried Pixian bean paste into the garlic bowl while it's still hot.
