Crayfish mooncake
Overview
A mooncake made by an Internet celebrity. I was resting at home today. I bought two kilograms of small crayfish from the market, peeled out half a kilogram of shrimp meat, and added some minced pork into the filling!

Ingredients
Steps
-
Wash the small crayfish and pour water
-
Shower with cold water
-
Remove the head and shell, remove the meat, and remove the mud intestines
-
Seasoning can be done by mixing. I'm afraid it won't taste good so I just stir-fry it. Add a little salad oil to the pot and sauté the ginger slices until fragrant. Add the crayfish meat, add some cooking wine, light soy sauce, salt, oyster sauce, sugar, and sesame oil and stir-fry evenly
-
The minced pork is also seasoned, adding cooking wine, light soy sauce, dark soy sauce, salt, sugar, oyster sauce, sesame oil, and chicken powder
-
Mix the minced pork and crayfish and set aside
-
Put the ingredients for the dough into the bread machine bucket and knead the dough
-
The dough must be out of film and take it out
-
Put the pastry ingredients into a basin
-
Knead into a dough ball. If it feels too soft, place it in the refrigerator for a while
-
Divide the water dough dough and puff pastry dough into 10 equal parts, let them rest for more than half an hour, be sure to cover them with plastic wrap
-
Take a small dough ball and wrap it with a small ball of pastry
-
Wrap each one, there are 10 in total and relax for a while
-
Take one and flatten it into a long strip
-
Roll up slowly, do the same for all 10 rolls, cover with plastic wrap and let rest for 20 minutes
-
Now take another roll and change the direction, flatten it, roll it out, and roll it up
-
Cover with plastic wrap and rest for 20 minutes
-
Take a loose roll and bring the two heads together
-
Flatten and roll it out, then add an appropriate amount of crayfish meat filling
-
Close the mouth tightly
-
Put it on the baking sheet, and I also used star anise dipped in red pigment to print a pattern
-
Put it in the oven at 180 degrees and bake for about 20 minutes
