Four eggs and two bowls of water are too simple and too common. How to make ordinary dishes extraordinary? So I chose fresh shrimp, and I named it: Golden Armor in the City

Boil a little water, then add the shrimp and twist it into a spiral shape. Blanch the shrimp with the tail upward until it is half-cooked. This action is only to make the tail of the shrimp stand up

Take 4 eggs (actually 3.5, one egg white is used for tender shrimp), then add 1 seasoning spoon of salt, mix with two small bowls of cold boiling water (the ratio of eggs to water is 1:2), skim off the foam, put cold water in the pot and start steaming the eggs over medium-low heat. After 4 minutes of boiling, carefully place the blanched shrimp into the half-cooked egg custard, remembering to expose the shrimp tails

OK! The shrimps have been put on the plate. After steaming for about 4 minutes, you can turn off the heat and take them out. Finally, adjust the sauce: 2 tablespoons soy sauce, 1 tablespoon vinegar + a little sugar. Use boiled water to make a mild salty taste and pour it on the egg custard. Add a few drops of sesame oil and sprinkle with chopped green onions. Perfect!
