Chop the pork bones into pieces, put them in a pot with cold water, add cooking wine and blanch them to remove the blood foam

Blanch, rinse, drain and set aside

Onion segments, ginger slices, star anise, bay leaves and dried fennel stalks are ready

Add water and vegetable oil to a hot pot and fry the sugar over low heat

Fry the sugar until it turns dark red

Add pork bones and stir-fry evenly to coat with sugar color

Add onion, ginger, star anise, dried fennel stalks and saute until fragrant

Cooking wine, light soy sauce, and balsamic vinegar stir-fry evenly

Add water and bring to a boil over medium-low heat and simmer

After simmering for one hour, add an appropriate amount of salt, and simmer for another 20 minutes or so. When the soup thickens, season with chicken essence and serve.
