Stewed hairtail fish with chopped pepper
Overview
The vegetable gift box this time also contains Xinnong’s new product, Xinnong Ecological Hairtail. This hairtail looks very fresh at first glance. The scales are silvery white and have not fallen off at all, which is really good. Today I made a stewed hairtail fish with chopped pepper. I made the chopped pepper myself in the winter. I haven’t eaten much of it because he doesn’t eat spicy food, so I can only use it when he is not at home to eat. It consumes it much slower. Today he said he won’t come back for dinner, so I just made a spicy one to satisfy his craving. Haha. After trying the chopped pepper stewed hairtail, I felt that the two went well together. I couldn’t taste the fishy smell of the hairtail, and the chopped pepper I made was not very spicy, which was in line with my taste. If you like spicy food, just use your favorite hot sauce. In short, this dish is not only beautiful in color, but also delicious in taste.

Ingredients
Steps
-
First prepare the ingredients: Xinnong ecological hairtail fish, dried onions, minced shallots, ginger, garlic and homemade chili sauce.
-
Remove the bag from the hairtail, soak it in cold water and defrost it. Remove the internal organs, cut off the fins, clean and dry the fish.
-
Then cut the hairtail into small sections and cut diamond-shaped flowers on the fish (then cut the dried onion into small pieces, shred one part of the ginger and mince one part, mince the garlic and set aside, I forgot to take a picture of this step.)
-
Put the fish segments, shredded ginger and Sichuan peppercorns into a basin, and add 2 grams of salt.
-
Add 25 grams of rice wine, stir a few times and marinate for half an hour.
-
Remove the seasonings from the marinated hairtail fish and dry the fish body, then dip it in the egg white and then the dry starch.
-
Put into hot oil pan and fry
-
Fry until golden brown on both sides and set aside.
-
Heat up a separate wok, add corn oil, then add chopped dried onions and stir-fry.
-
Stir-fry the dried scallions until they turn slightly yellow, then add minced ginger and garlic
-
Then add homemade chili sauce and stir-fry for a while
-
Add 10 grams of light soy sauce
-
Add 10 grams more oyster sauce
-
Add 300 ml of water
-
After boiling the pot, add the fried hairtail, cover and simmer for about ten minutes.
-
When you see the soup thickens, sprinkle with chopped green onions and serve!
