Have all materials ready.

Put the egg yolks into an oil-free and water-free basin, add 20 grams of fine sugar and mix well. Add oil and milk and mix well with a manual egg beater. Add the sifted low-gluten flour and mix well in a zigzag shape.

Pour the mixed egg yolk paste into a sieve and sift twice. This step is very important if you want to have a delicate towel bottom.

Add a few drops of lemon juice to the egg whites and beat at medium speed. Add fine sugar in three batches and beat until fine and curved.

Pour one-third of the egg white batter into the egg yolk batter and mix evenly. Pour the egg yolk batter into the egg white batter and mix evenly. Pour into a gold plate lined with oilcloth to knock out the air bubbles, and bake in a preheated 160-degree oven for 20 minutes.

Remove the oilcloth while it's hot and let it cool, spread the homemade fig jam on the roll and set aside.

Dissolve matcha powder, red yeast rice powder, and cocoa powder with boiling water, and dip it in with a fine brush to draw!
