Handmade Shanxi braised noodles

Overview

The braised noodles that we people in Yuncheng, Shanxi, often eat are actually braised beans and noodles. They are called differently, but the methods are basically the same. The steamed braised noodles taste salty and fresh, and the noodles are chewy. Every time we eat this noodle when we are away from home, we feel like we are at home.

Steps

  1. Crack two eggs into the flour and knead into a smooth dough

  2. Sprinkle flour evenly on the cutting board and take out the dough

  3. First use a rolling pin to roll it into a small round shape

  4. Sprinkle a layer of flour and roll it out, keep rolling it into a thin round shape as shown in the picture

  5. Sprinkle the upper part with cornmeal flour (the anti-sticking effect is better than white flour)

  6. Cut in the middle and fold in half

  7. Then sprinkle with cornmeal

  8. Make two cuts in the middle (the noodles should not be too long)

  9. Fold together

  10. Then fold it again from bottom to top (the narrower point is easier to cut)

  11. Cut the noodles into thin pieces with a knife

  12. Cut noodles

  13. Sprinkle with vegetable oil and mix well with your hands

  14. Place a clean cloth on the steamer and add the mixed noodles

  15. Steam for fifteen minutes

  16. Cut the chicken breast into small pieces (there is no pork in Muslim countries, so use chicken instead). If it is pork belly, it tastes better

  17. Wash the green beans and break into small sections

  18. Slice green onions and mince ginger

  19. After the noodles are steamed, pour them into a basin

  20. Pour a little oil into the pot

  21. After the oil is hot, add onions and ginger and stir-fry until fragrant

  22. Add in the diced chicken and stir-fry until white

  23. Add the green beans and stir-fry evenly

  24. Pour in appropriate amount of dark soy sauce and stir-fry evenly

  25. Add boiling water that covers the green beans, add salt and chicken essence, and cook for two minutes

  26. Add the steamed noodles

  27. Stir evenly, then pour it into a steamer (no need to lay a basket cloth) and steam for twenty minutes

  29. Needless to say about the taste, each of the dozen or so people ate two bowls
