Fried Chinese Toon Fish
Overview
Another delicacy in spring is toon. I also love toon, so I planted two toon trees beside my garage. Now they are so big that I can eat the freshest toon every spring. Speaking of toon, there are actually many things to pay attention to. Toon has head buds, second buds and third buds. The head buds are the first buds that sprout on each branch when the spring has just turned warm. They are also the most fragrant, tender and delicious ones. After the first buds pass, the buds that sprout on the branches are the second buds. It is relatively tender, and although it is also very fragrant, it is not as good as the first bud. The buds that grow on the branches are the third buds, and the taste and texture are far different. Generally, they are no longer eaten, because by the time the third buds grow out, it has basically passed the Grain Rain period, and the texture of the toon is also very woody and unpalatable.
