【Susu's Private Kitchen】Sour Radish and Duck Soup
Overview
The harvest of round white radishes I planted a few days ago was good. I pickled some sour radishes. It happened to be a bit cold today, so I took one out and cooked it in a pot of hot soup. It was sour, spicy, and so good to warm my stomach!

Ingredients
Steps
-
Home-made pickled radish and pickled ginger.
-
Cut the pickled radish into long strips and soak the ginger into slices.
-
Chop the chives, wash the wolfberries and set aside.
-
Chop half the old duck into chunks. (Since there are only two people in the family, I only use half an old duck)
-
Boil water in a pot, add duck meat and blanch it.
-
Take out the blanched duck meat.
-
Take another casserole and boil the water, put in the blanched duck meat, add the beaten ginger, onion knots, peppercorns, cooking wine, a few dried chili peppers and jujubes.
-
Bring to a boil and remove the foam, add pepper noodles, turn down the heat and simmer for about an hour.
-
After an hour, add the chopped pickled radish and pickled ginger.
-
Turn on high heat and bring the soup to a boil.
-
Then turn down the heat and continue to simmer for about an hour.
-
Finally, turn off the heat and add wolfberry and a little chicken essence.
-
Sprinkle with chopped green onion, and a pot of delicious old duck soup is completed.
