Smoked Backbone
Overview
The smoked sauce in the restaurant is too salty and lacks flavor. I have time to make it myself today. It is healthy and low in salt, and it can exercise myself. What a fun thing to do!

Wash the backbone and put it in cold water and add all the seasonings except sugar, salt and tea leaves.

Bring to a boil over high heat, simmer over low heat, and add salt after 40 minutes.

After stewing, take it out and drain the water.

Put tin foil in the pot, put sugar and tea leaves in the pot, take out the seasoning and put it on the bottom of the pot.

When the pot is dry and the sugar starts to smoke, add the backbone to be smoked, cover the pot, turn off the heat after about 6-7 minutes, let it cool slightly and remove from the pot.

When the finished product is served, gently break it into small pieces with your hands and serve!
