Overview
Every year during the Chinese New Year, you must braise pork tongue and eat it. Because in our local dialect, pig tongue is a homophone for making money. If you eat pig tongue during the New Year, you will have good business profits and good luck in the coming year.

Remove impurities from pig tongue, wash it,

Put cold water in the pot, add cooking wine, boil the ginger slices for 3 minutes, remove, peel off the moss and rinse.

Take a soup pot, put in the pork tongue, add 80% of water,

Add onion knots, ginger slices, star anise, cinnamon bark, bay leaves,

Add dark soy sauce, cooking wine, rock sugar,

Bring to a boil over high heat, then simmer for 40-50 minutes,

Add some salt and reduce the juice over high heat,

Once cool, slice and serve.
