Clean the carp, add salt, spread cooking wine and marinate for half an hour.

Chop the ginger, onion and garlic.

After marinating, apply a layer of starch.

Heat oil in a pot, pour carp into it and fry slowly over low heat until golden brown. Remove and control the oil.

Leave the base oil and sauté the ginger, onion and garlic until fragrant, add appropriate amount of water, salt, soy sauce and dark soy sauce.

After boiling, add the carp and simmer for 10 minutes.

When the time comes, pick up the carp and put it on a plate. Add oil, sugar, balsamic vinegar and water starch to the soup and cook until thick.

Pour over the sauce and sprinkle with coriander.
