Wash the clams by spitting sand.

Shred the ginger slices, mince the sourdough, and mince the green onions.

Heat the oil pan until it emits green smoke, pour the oil into it and add shredded ginger and dried chilies. Sauté until fragrant (if you like it spicier, you can cut the dried chilies into sections)

Pour in the clams and stir-fry, add half a spoonful of sugar, open the clams slightly and add minced garlic, pour cooking wine, a few drops of vinegar, pour in oyster sauce and stir-fry.

Stir fry evenly.

When the clams open their mouths, pour in the chopped green onion, add chicken essence and mix well, then it is ready to serve.
