Speaking of mutton, my favorite is the kind of sheep raised locally in Hainan. There is basically no mutton smell, the meat is firm, not frozen, and very fresh. In Hainan, mutton is mostly eaten in a side oven, and the stir-fried version is also good. The steamed mutton in the Shishan area of Haikou, Hainan is also delicious. Think about the mutton smell, how much mutton will it be if it is steamed? However, the mutton produced in Shishan is indeed able to ignore the smell, which is amazing. There are several ways to remove the mutton from Hainan mutton: using vinegar, using white radish, and using mung beans. My family has always used the first two methods. This time I tried making braised pork, and everyone said it was OK after eating it.
