  3. Boil water in a pot. When the water boils, blanch the chicken wing roots. You can add a little cooking wine to remove the fishy smell

  4. After blanching, take out the chicken wing roots and wash them with clean water to remove the floating residue. Peel and wash the white radish, select the green onions, peel the garlic, and peel and wash the ginger and set aside.

  5. Cut green onions diagonally into sections, slice ginger and garlic, cut white radish into evenly sized radish cubes, and cut mushrooms into cubes (I forgot to cut them when taking pictures), wash with spices and set aside

  6. Heat the pan with cold oil, add an appropriate amount of rock sugar, and simmer over low heat until the sugar color turns white. I like sweet food, so I add more rock sugar. If you don’t like it, you can also use dark soy sauce instead of the sugar color

  7. I'm afraid of oil leakage, so I use kitchen paper towels to absorb the moisture from the surface of the chicken wings

  8. Add the boiled sugar color to the chicken wing roots and stir-fry quickly. Because I took the photo alone, I took the photo before it became tender to prevent the sugar from getting through

  19. Reduce the juice over high heat. I deliberately put more water today. Before the juice is reduced, pour out some soup and add it to the cooked noodles. It's delicious, haha.
