Ingredients
Steps
-
Have all materials ready.
-
Cut green and red peppers and tomatoes into slices, and chop (beat) ginger, garlic, and rock sugar into pieces.
-
Put the ribs in cold water and boil to remove the blood.
-
After the water boils, remove the floating foam, remove the ribs, and set aside.
-
Put the rock sugar into the pot with cold oil. The amount of rock sugar does not cover the oil or the ratio of rock sugar to oil is 1:1.
-
Use a spatula to stir-fry over medium heat (similar to the method of stir-frying, the rock sugar melts while stir-frying).
-
When the color is close to brownish red and bubbles appear, stir-fry it and it will pass. After that, it will become soft.
-
Turn off the heat, pour in the pork ribs, and stir-fry quickly to allow the sugar color to coat the ribs evenly (turning off the heat in this step can prevent the sugar color from being burnt in the final stage, and the oil temperature is already very high, so as to minimize the splashing of oil stars).
-
Turn on the heat, add ginger and garlic, and stir-fry the ribs until golden brown, which is when the stir-frying is completed.
-
Pour in hot water, not too much water, just enough to cover the ribs.
-
Cover the pot, bring to a boil over high heat, then turn to low heat and simmer.
-
Simmer until the water is almost dry. Add an appropriate amount of salt, mature vinegar, and white sugar, stir well, add green and red peppers, and tomatoes and stir-fry for a while. Pour in water starch to thicken the sauce. Stir quickly until it feels sticky and turn off the heat.
-
Sprinkle some white sesame seeds (optional), plate, and eat.
