Overview
The twenty-seventh day of the twelfth lunar month has arrived in a blink of an eye. Soak the beef shank in clean water after thawing, changing the water in between and cleaning the beef shank;

All the spices are ready, the scattered spices are put into tea bags, and the nutmeg is cracked with the back of a knife;

Pour cold water into a pot, add beef, and bring to a boil over medium heat;

After boiling the pot, there will be a lot of foam on the surface, use a spoon to skim it out;

After the scum is basically wiped off, add onion and ginger;

Add 200 grams of sweet noodle sauce, stir evenly, cover the pot and bring to a boil over high heat, then turn to low heat and simmer until the beef can be penetrated with chopsticks; this will take about an hour; finally, add an appropriate amount of salt;

Do not take out the stewed beef, keep it in the pot until it is completely cool, take out the beef and filter the soup;

Continue to put the beef in the soup and refrigerate it overnight;
