Casserole with lamb chops and braised carrots
Overview
It is said that it is also a very filling dish, and the stewed lamb chops are fragrant but not fat. This time I used a wok to simmer it, which is better than using a pressure cooker. Slow stewing can make the ingredients more fully absorb the flavor... Some people like to stir-fry the sugar color before stewing it in the pot. I omit the step of frying the sugar color. I think too much sugar is added and the taste is too sweet and unpalatable. It depends on personal preference.

Prepare the ingredients as shown in the picture, lamb chops, carrots, Laoganma oil chili pepper, dried chili pepper, ginger, star anise, cinnamon, bay leaves, Sichuan peppercorns

Add appropriate amount of water to the pot, add lamb chops, onion knots, peppercorns, ginger slices and cooking wine. After the water boils, continue to cook for two to three minutes

Rinse the drained lamb chops, drain them and set aside

Further break down the ingredients and cut the dried chilies into sections, slice the ginger, and cut the carrots into cubes

Add a small amount of oil to the pot, add ginger slices, dried chili peppers, star anise, and cinnamon and stir-fry over low heat until fragrant. Then pick up these spices and set aside, otherwise some of them will burn if you stir-fry for too long

Pour the prepared lamb chops into the pot and stir-fry over low heat until the mutton water dries up and the skin turns yellow, about ten minutes. Half a spoonful of cooking wine can be added in the middle.

Put the lamb chops into a casserole and add the spices you fished out before. Add a few rock sugar, two spoons of light soy sauce, a spoonful of dark soy sauce, and an appropriate amount of water to cover the ingredients

Bring to a boil over high heat, then turn to low heat and simmer for about 60 minutes. Uncover and add carrot cubes and continue to simmer for 15 minutes. Add appropriate amount of salt. Because carrots are sweet, there is no need to add chicken powder
