Boil the ribs for 5 minutes, drain and set aside

Heat oil for 5 minutes, sauté ginger slices and Sichuan peppercorns, stir-fry ribs for 3 minutes

Add dark soy sauce cooking wine, rock sugar, chili pepper, a little water, turn down the heat, cover and simmer for 20 minutes

Open the lid and turn to high heat to reduce the sauce
